Improvement of soybean seed oil quality using fatty acid mutants

Soybean [Glycine max L. (Merr.)] is an important legume crop, with annual global production of 367.8 million tons. The seeds contain about 20% oil dry weight, which mainly used for extraction, and the improvement soybean quality a critical subject world-wide. We isolated several fatty acid accumulation mutants identified corresponding genes. Next, we attempted to improve using these mutant successfully developed novel high-oleic cultivar, "SADAIEICHIOICHIGOU", from oleic content as high 80 % total acids was obtained. Moreover, linoleic "SADAIEICHIOICHIGOU" obviously low. extracted this cultivar showed higher oxidation stability than conventional varieties had decreased levels unpleasant green off-odor soybeans. In addition, that does not accumulate furan acids, associated hay-like odor, gene. This series have great potential nutritional value, functionality, palatability, oxidative soybean-based food.
